Canelo Cabernet Sauvignon Carmenere 2009 Chile

13.5%, M&S, £6.99

Not just cabernet sauvignon and carmenere, but also merlot with a few per cent of aspirant bouchet and syrah, and it all sits together very nicely. This is a red with a refreshing edge, good weight, hints of cocoa nibs and tea bushes, and a bit of French oak. Perfect for lunchtime swigging with salami or rough and ready dinners. And it’s Fairtrade too.

Gavi di Gavi La Minaia Bergaglio 2009 Italy

12.5%, slurp.co.uk, £13.50

Stand back sauvignon blanc, move over pinot grigio, this northern Italian beauty, made from cortese, was awarded

Tre Bicchieri (that’s the top mark of three glasses) in the prestigious Gambero Rosso guide. Think the most fragrant lemon zest mingled with the most piercing lemon flesh, in a cool, smooth curve. Lovely.

Block 13 McLaren Vale Shiraz-Grenache 2008 Australia

13.5%, Tesco, £8.99

Made by Chester Osborn of d’Arenberg, this is so Australian: the nose is big and ripe, the fruit sweetness comes at you in a broad, expansive sweep and when you sip it’s like being hit by a gigantic wave, bathing you in warmth. A synaesthetic response to its taste might be to think of the saturated oranges and reds of the classic Ayers Rock picture. Lovely.

Chicken and mushroom pie recipe

Chicken and mushroom pies
Photo: Jasper James

Serves 8

2kg shortcrust pastry – for the underneath of the pie

1.5kg puff pastry – for the pie lids

5kg diced chicken (both leg and breast meat)

2kg sliced onions

2kg chopped mushrooms

6 tbs chopped mixed herbs, thyme, parsley and tarragon, or you can use dried herbs

1 bottle white wine

3 tbs Worcester sauce

2 tsp freshly ground black pepper

3 tsp salt

3 dsp cornflour

Put all the ingredients, apart from the pastry, chicken and cornflour, into a large saucepan, bring to a simmer and cook for 10-15 minutes, stirring occasionally.

Add the chicken, stir well together, bring to the boil again, then turn down to simmer and leave to cook for one and a half hours, stirring occasionally.

When cooked, mix the cornflour with a small amount of cold water until it is a smooth paste. Pour into the chicken mix while stirring, turn off the heat and leave to cool.

When cool, fill the mixture into pastry cases, using shortcrust pastry for the bases and puff pastry for the tops. Brush the tops with egg wash and bake at 180?C for 30 minutes or until nicely golden brown.

Hamish Anderson's wine choice 2007 Cairanne Blanc 'Réserve des Seigneurs’, Domaine de l’Oratoire St-Martin, Rhône Valley, France Vine Trail (www.vinetrail.co.uk) £8.95. The pie could handle white or red wine depending on your disposition, just make sure if it is the former it is rich and the latter light and fruity. Being from a hot region this is naturally full-bodied and intense with flavours of honey and dried herbs. These elements pair with the pie’s ingredients, while a pleasing fresh finish cuts the rich sauce.

An easy way to prepare lasagna noodles?

How do you keep your fried food both warm and crisp?

When you are frying your food, for example chicken breasts, an easy way to keep your food both warm and crips until you are ready to serve your dish is by using a cooling rack. Place the rack on top of an aluminum foil covered cooking sheet and place it in a warm oven. As you finish frying your recipe, place your chicken breasts, right on the cooling rack. This will prevent your dish from becoming soggy, keeping it crisp, while keeping it warm. The Rachel Ray Show

Before covering your casserole or cheese topped dish with aluminum foil, spray with non-stick spray. This prevents the top of the dish from getting stuck to the bottom of the foil.

Cooking Ground Beef Healthier

Keep your bread warm. (Perfect for the Holidays!)

This will be good just in time for the holidays. Go outside and get a few bricks, or rocks that are around the same size. Clean them and wrap them up in tinfoil. Place them in the oven and heat them up. After, place them in your bread basket and cover them with a cloth. Place your bread on top and the radiant heat from the brick/rock will keep your bread warm. A perfect for a nice dinner.

Need coffee and ran out of filters?

Use a clean paper towel. Cut the towel to fit into your coffee maker. Push down slowly into filter basket, and make coffee as usual. I am enjoying my coffee right now because of this.

How to Reheat Pizza

Making frozen bread and rolls fresh again!

Do you have a whole loaf of bread, unsliced, in the freezer? Some leftover rolls, or a half loaf of frozen, unsliced bread? Want to make them good as new?
Run the bread under warm water just to rinse the outside well, a few seconds. Place on the rack in a 50-300 degree oven and check on it after ten minutes. Voila, rejuvenated bread, hot and crusty and good as fresh. Tidbitz given by Karen K., West Bloomfield, Mi

Ways to use coffee filters...who knew!

and you can buy 1,000 at a time at the dollar stores for almost nothing....

1. Cover bowls or dishes when cooking in the microwave. Coffee filters make excellent covers.

2. Filter broken cork from wine. If you break the cork when opening a wine bottle, filter the wine through a coffee filter.

3. Recycle frying oil. After frying, strain oil through a sieve lined with a coffee filter.

4. Weigh chopped foods. Place chopped ingredients in a coffee filter on a kitchen scale.

5. Prevent a Popsicle from dripping. Poke one or two holes as needed in a coffee filter.

6. Put a few in a plate and put your fried bacon, French fries, chicken fingers, etc on them. Soaks out all the grease.

(This tidbitz was given by my girlfriend Dense.)

An easy way to use your measuring cups
Before you pour sticky substances into a measuring cup, fill with hot water.
Dump out the hot water, but don't dry cup. Next, add your ingredient (peanut butter, honey, etc.) and watch how easily it comes right out.
